10 healthier no-bake holiday cookie recipes

We all love homemade holiday cookies- at least I do anyway.

The only problem is that I don’t always feel like tying on an apron and slaving away in the kitchen to get my cookie fix.

Thankfully, I have an easy recipe that involves absolutely no baking at all.

Oh and did I mention that it isn’t terribly unhealthy?

Chocolate Coconut No-Bake Cookies

(yields approximately 16 cookies)

Ingredients:

1 cup coconut sugar

1/2 cup unsweetened almond milk (use unsweetened chocolate almond milk if you’re a chocoholic!)

1/4 cup coconut oil

1/3 cup cocoa powder

3 cups gluten-free oats

1/2 cup natural peanut butter or almond butter

1/2 cup unsweetened shredded coconut

2/3 cup organic cacao chips

1/4 teaspoon cinnamon

1/2 teaspoon vanilla extract

 

Directions:

1. Line a cookie sheet with wax paper and set aside.

2. Place the oats, peanut butter, coconut, chocolate chips, cinnamon, and vanilla in a large bowl and set aside.

2. Combine the sugar, almond milk, coconut oil, and cocoa powder in a medium saucepan over medium heat.  Allow the mixture to boil for about 1 minute.

3. Pour the mixture over the oat mixture and stir until all ingredients are thoroughly combined.

Tip: You’ll have to mix extra hard if you’re using almond butter since it isn’t as soft as peanut butter.

4.  Using a tablespoon, spoon the dough onto the cookie sheet.  Place in the refrigerator until firm.
