The cards, the jewelry, the fresh bouquets of flowers… I just love Valentine’s Day.
Oh and let’s not forget the candy. I mean, what woman can resist a nice big box of delicious chocolates?
Unfortunately, February can really test a person’s willpower. I know that I practically have to run past the Valentine’s Day candy aisle when I’m in Target these days!
But everyone is entitled to have dessert on the most romantic day of the year in my opinion, and it is even possible to make healthier quilt-free versions of your favorite recipes. All you have to do is make a few simple substitutions. For example, you can use whole wheat flour instead of white flour, skim or almond milk rather than cow’s milk, applesauce instead of oil, and Greek yogurt in place of cream. The changes are so subtle that your significant other will never realize that the dessert is relatively healthy.
If you’re looking for some Valentine’s Day dessert inspiration, allow me to make a few suggestions that are on the lighter side…

I also love making this smoothie for my husband on Valentine’s Day before he heads off to work. I’m pretty sure that he thinks I’m giving him a milkshake for breakfast rather than a healthy smoothie.
Chocolate Cherry Valentine’s Day Smoothie

1 cup of pitted black cherries (fresh or frozen)
1 frozen banana
1 tablespoon of coconut oil
1 tablespoon of unsweetened cocoa powder
2 cups of unsweetened chocolate almond milk
Stevia (to taste)
1 teaspoon xanthan gum for thickening (optional)

If you want to be extra healthy, you can toss in a few handfuls of fresh spinach- just don’t hold me responsible if your loved one notices!
