If you had asked me five years ago to describe a typical vegetarian Thanksgiving, I would have used words like bland, boring, and tasteless, and I am sure that many people would have agreed with me.

In recent years, however, I have learned that there’s a whole other world beyond Tofurky and plain vegetables.  It’s a world filled with hearty squash and sweet potato dishes,  savory comfort foods, and creamy filling meals that aren’t short on flavor at all.
