Healthy Breakfast Muffins For When You’re on the Go!

Understatement of the year: I am not a morning person. Don’t talk to me, look at me, or touch me before I’ve been up for a while & had a big gulp sized coffee.

That being said, you can assume I don’t wake up raring to whip up a healthy breakfast. I was giddy with excitement when a girlfriend told me about these egg white muffins she made. Easy peasy and you have breakfast ready for the whole week. Be still my sleepy heart.

The ingredients are simple. Whatever you want! All you must have is a muffin tin, cooking spray, egg whites, and salt & pepper. I added sautéed turkey sausage, green pepper & mushrooms in mine and added garlic powder along with the s&p. They even make egg whites ready to pour, which is what I used. #lazygirlproblems

Not one to toot my own horn, especially when it comes to matters of cooking, but man these things are good! I was honestly waiting for a huge pinterest fail. Runny or bland-inedible in some way, but alas I love the consistency & flavor! Pack 2 in a small ziploc bag and you have breakfast for 6 days. You can find the exact step by step recipe I used here.
