I love living in the Carolinas for so many reasons- the weather, the hospitality, the restaurants, and let’s not forget the peaches.  South Carolina simply has the best peaches. “Did you know that South Carolina actually outranks Georgia – “The Peach State” – in its production of peaches? During a normal year, South Carolina grows 60,000 tons of peaches.” Yep.  You heard it here first.
While I do enjoy the experience of biting into a ripe, juicy peach, I also try to work peaches into just about every recipe that I make during this time of the year. Â Cobbler of course, but also in salsas, salads and even pizza.
When shopping for your ingredients, be sure to select peaches that are fragrant and vibrant in color. Â Some of the best ones can be found at all of the local farmers markets right here in and around Charlotte.
