Cucumbers are a staple that you’ll find in even the most basic salads. Â A lot of people complain that they can be boring and don’t have much taste, but I find that when used in the right way, cucumbers can be appetizing, refreshing, and surprisingly tasty.
Cucumbers also have antioxidants and anti-cancer properties, can fight inflammation, are hydrating, and this just happens to be the best time of the year to buy them.
I actually visit the farmers market weekly during this time of the year in order to pick up the ingredients to make this next recipe. Â My entire family goes crazy for it!
Cucumber Salad
(Makes about 8 servings)
Ingredients:
4 medium-sized cucumbers, very thinly sliced
1 small white onion or half of a large white onion, thinly sliced
1 cup of white vinegar
1/2 cup of water
2/3 cup of pure cane sugar
1 tablespoon of freshly chopped dill
Directions: Add all ingredients to a large mixing bowl and stir to combine. Â Cover and refrigerate for at least 24 hours before eating. Â I like to divide the mixture into Mason jars, and I let it sit in the refrigerator for 3-5 days before eating. Â Trust me, it is well worth the wait!
