Cucumbers are a staple that you’ll find in even the most basic salads. A lot of people complain that they can be boring and don’t have much taste, but I find that when used in the right way, cucumbers can be appetizing, refreshing, and surprisingly tasty.
Cucumbers also have antioxidants and anti-cancer properties, can fight inflammation, are hydrating, and this just happens to be the best time of the year to buy them.
I actually visit the farmers market weekly during this time of the year in order to pick up the ingredients to make this next recipe. My entire family goes crazy for it!
Cucumber Salad
(Makes about 8 servings)
Ingredients:
4 medium-sized cucumbers, very thinly sliced
1 small white onion or half of a large white onion, thinly sliced
1 cup of white vinegar
1/2 cup of water
2/3 cup of pure cane sugar
1 tablespoon of freshly chopped dill
Directions: Add all ingredients to a large mixing bowl and stir to combine. Cover and refrigerate for at least 24 hours before eating. I like to divide the mixture into Mason jars, and I let it sit in the refrigerator for 3-5 days before eating. Trust me, it is well worth the wait!
