Healthy Eating 2019: Our 10 fave recipes for breakfast, lunch, dinner and snacks to help you achieve those food goals.

Breakfast

Healthy Homemade Pumpkin Pie Granola – if you haven’t tried your hand at making your own granola, you’re missing out! Steer clear of the added (and often excess) sweeteners and instead mix up a solid way to start your day: whole grains, seeds, nuts and plenty of flavor. Top it with your milk of choice, or shovel into your mouth by the handful;).

Instant Pot Quinoa Porridge – So you got an Instant Pot for the holidays, but it’s sitting in your pantry feeling lonely. It’s okay; there’s an absolute learning curve to the 7-in-1 appliance, but once you get the hang of it, I promise you’ll love it! Break it out for this breakfast that’s gluten-free, dairy-free and heck – even grain-free! You’re welcome.

My Kids Favorite Overnight Oats – Make these the night before, and head out the door full of energy and ready for whatever the day brings you. Perfect for busy mornings (hello!) and days when you need to get up and attum. And yep, you read that right – my four kids gave this one the thumbs up, so I think we can safely say they are kid-approved!

3-Ingredient Avocado and Greens Omelette – Minimal ingredients, healthy fats and a dose of greens to start you off on the right foot. You totes deserve this.

Lunch

Egg Roll in a Bowl – Whether you’re paleo, AIP, vegan or just HUNGRY, this one-dish meal is a winner across the board! Hint: use chopsticks to eat to up the fun factor.

Spaghetti Squash Casserole – Completely customizable, if you’ve tried spaghetti squash with fail in the past, this is your ticket to success. Loaded with sauce, veggies, meat and cheese (both optional),  it’s gluten free and low in carbs, too.

Dinner

Slow Cooker Healthy Mexican Chicken – Mexican-flavored chicken + a throw it in and go meal = a winner in my book. Let this one cook up while you tend to work, household duties or (ahem) online shopping, etc. and serve this up rolled into tortillas, atop a big salad (or even a sweet or regular potato), with rice and beans or (whew!) on some spaghetti squash or zucchini noodles if you’re really staying strong with those clean-eating goal. Get it, girl!

Sheet Pan Maple Mustard Salmon with Brussels Sprouts – Minimal cleanup and full of goodness, this sheet pan meal is sure to get on your normal rotation. No bueno Brussels? No problem. Sub out another veggie for the same effect. So good!

Snacks

Roasted Eggplant Dip – While it’s going to be hard to compete for the app of choice at football gatherings, this non-traditional dip is chock full of veggies and will likely have you rethinking your relationship with eggplant (in a good way!) Plus it’s a dish you can feel good about eating amongst the wings, Velveeta and other stuff you’re trying to avoid.

Bacon-Jalepeno Cheese Ball – Holy cheeseballs, this one may just get the award, however, not only for looks, but the ingreds, too! Cream and cheddar cheeses, bacon, jalapeños and more come together in this appetizing dish that’s balls-to-the-wall good.  SUSU FEEL FREE to tone this down if needed;).
