THIS GUACAMOLE RECIPE GOES WAY BEYOND THE BASIC GUAC.
We like to call this Elevated Guacamole…
and it’s {seriously} the BEST Guacamole you’ll ever have.
WHAT MAKES THIS GUACAMOLE SO FUN IS THE
POMEGRANATE SEEDS.
The little beads pop in your mouth and it’s like a little heavenly surprise that pairs nicely with the Avocado and Mango duo.
LET’S JUST SAY… THIS IS THE
“THREE’S COMPANY“
OF THE FRUIT WORLD. 😉
INGREDIENTS:
- 3 ripe Avocados, roughly chopped
- Juice of 1 Lime
- 1/4 Sweet White Onion, minced
- 1 clove Garlic, minced
- 1/2 Jalapeno, seeded & minced {you can use a whole one if you want your Guac spicier}
- 1/2 cup Cilantro, chopped
- 1/2 cup Pomegranate Seeds + more for presentaiton
- 1 Mango, chopped {save a few chunks for presentation}
- Salt to taste {I used 1 tsp. + a little extra to taste}
- Plantain Chips {for serving}
DIRECTIONS:
- Prepare and chop all of the fruits, vegetables and herbs according to above preferences.
- Mix all ingredients together in a large bowl {except for the extra Pom Seeds & Mango} and allow to marry in the fridge for at least an hour before serving. {NOTE: Technically, you can serve this dip right away, but Guacamole tastes SO MUCH BETTER if you let the flavors mingle for 1-2 hours before serving.}
- When you’re ready to serve, transfer the dip to a serving bowl and top with extra Pom Seeds and Mango. Serve with Plantain Chips. {You can serve with Tortilla Chips as well but I find that the Plantain Chips add an extra touch of Exotic-ness.}
