15 Soups to Get You Through Winter

Day after day of below freezing temperatures has me hankering for soup. If you’re like me and wanting something hardy and warm on these frigid evenings, take a look at some of the best soups to get us through hibernation this winter:

Red Lentil Soup with Sage & Bacon: Did you say bacon?! Yes, I’ll have a cup of that. Actually, make it a bowl! Lentils, so healthy, and bacon, well, eh, so flavorful, is a mix of everything delicious.

Sausage & Kale Soup: Killer combo of protein & super food. Kale yeah!

Creamy Clam Chowder: This recipe one cup of cream for the entire pot, so a less guilty version of this New England favorite.

Rainbow Stew: This soup is from a children’s book entitled, you guessed it – Rainbow Stew by Cathryn Falwell. A fun way to include your kids or grandkids in the kitchen, and it leaves wiggle room for the times when you may not have everything you need.

Pesto Pasta e Fagioli: This is from the Mexitalian blogger, Alyssa, who self identifies as “a food loving girl raised on pasta & tamales”. This is guaranteed to give you just the right amount of pasta and veggies to please.

Broccoli & Cheddar in a Bread Bowl: Panera Bread has mastered this, and I used to savor this soup as a teenager. Now I just make it in my pjs. This may not be the healthiest option, but it means less dishes, which convinced me to add it to my rotation.

Matzoh Ball Soup: Nothing like matzoh balls – yum! This is when you have more time to prep. A crowd pleaser for sure.

Chicken Tortilla Soup: You can’t go wrong with a recipe from Ree Drummond, The Pioneer Woman. If you’ve never heard of her, spend some time perusing her site. You can thank me later.

Chunky Tomato Soup: Campbell’s has set the bar low for tomato soup. Pair this with a grilled cheese, and it’ll warm you through and through, not to mention wafts of nostalgia will fill your home and maybe prompt you to get out old photo albums.

Meatball Sub Soup: It is as hearty and Italian as it sounds. Don’t know why I have just discovered this, but it’s a new winter staple.
