At this time of year you can’t escape pumpkin pie, lattes, bread and muffins.

While those traditional fall foods are certainly delicious, there’s a whole other world of unique and healthy pumpkin flavored foods out there.  For example, how does pumpkin oatmeal sound?

5 unusual pumpkin recipes

Pumpkin Pie Oatmeal

(Serves 1)

Ingredients:

1 packet of steel cut oatmeal

1 cup of canned pumpkin

1 tablespoon of chia seeds, optional

1/4 teaspoon of pumpkin pie spice

1 teaspoon of organic raw honey (or sweetener of choice)

1/2 teaspoon of ground cinnamon

1 teaspoon of vanilla

Directions:

Add boiling hot water to the instant oatmeal according to the packet directions, pour in some chia seeds, and stir it up.  Add all of the remaining ingredients, and pop the bowl in the microwave for about 30 seconds.

For an even creamier texture, you can also use unsweetened vanilla almond milk instead of the water.  Feel free to garnish with chopped nuts, raisins, or brown sugar as well.
