I never saw this one coming, but cauliflower is the hottest thing since kale.
That’s right. Cauliflower, the white, boring, and seemingly tasteless cruciferous vegetable, is now the most coveted item in your local grocery store’s produce aisle.
While much of the hype is probably due to the latest gluten-free and Paleo diet trends, there are actually some powerful health benefits to eating cauliflower. Some research has shown that it can help to prevent cancer and inhibit tumor growth. It also contains the vitamins and minerals that keep our immune system healthy and strong. Plus, it is high in fiber and low in calories.
Obviously, you can eat cauliflower raw or steamed. It is actually pretty versatile, and it can be used to replace anything from starchy potatoes to processed carbohydrates.
If you need some convincing, try this recipe for mashed “potatoes”.
Cauliflower Mashed Potatoes
Serves 4
Ingredients
1 head of cauliflower cut into pieces
2 ounces of softened light cream cheese
1 tablespoon of fresh dill
Salt & pepper (to taste)
Directions: Bring a large pot of salted water to a boil and add the cauliflower. Cook for about 10 minutes or until the cauliflower is soft. Drain the water from the pot and set the cauliflower aside in the pot.
Add the cream cheese and a dash of salt and pepper to the cauliflower and mash everything together using a potato masher. Lastly, add the dill.
You can also add cheese, chives, garlic, or whatever you’d usually add to your regular mashed potatoes.
Believe it or not, you can also make some other traditional dishes and sides using cauliflower as a substitute, such as cauliflower rice, pizza crust, and even wings. (!!!)
I guess that cauliflower isn’t so boring after all.
