What if I told you that you can enjoy all of the warming, rich, hearty comfort foods of wintertime without compromising your health or diet in the process?

This chili just screams comfort food. It is perfect for lunch or dinner during the cold weather. The best part is that it can easily be turned into a vegetarian recipe. Just eliminate the meat and double the amount of beans.
Slow Cooker Chili
(Serves 6-8)
Prep time: 15 minutes
Cook time: 6-8 hours
1 green bell pepper cut into strips
1 cup sliced onion
1/2 cup sliced carrot
1/2 cup sliced zucchini
1 pound lean ground turkey
1/4 cup chili powder
1 1/2 teaspoons sugar
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 (14.5-ounce) cans no-salt-added stewed tomatoes, undrained
1 (16-ounce) can kidney beans, drained
1 (15-ounce) can black beans, drained
1 (8-ounce) can no-salt-added tomato sauce
Cook turkey and onion in a medium skillet over medium-high heat. stirring to break up the meat until the turkey is no longer pink. Drain and place the turkey mixture into the slow cooker.
Add all of the remaining ingredients and mix well. Cover and cook on high for 6 to 8 hours.
