During the winter, I love nothing more than a giant bowl of hot oatmeal for breakfast. When the spring and summer arrive, however, the last thing that I want to eat in the morning is something hot, and I tend to favor breakfasts that are refreshing and light.
One of my favorite go-to warm weather breakfasts involves homemade granola. It can be sprinkled on top of smoothies, added to fruit parfaits, rolled into a wrap, or eaten like cereal with cold milk.
Cinnamon Spiced Granola
Ingredients
3 cups rolled oats
1 cup chopped cashews
1 cup chopped almonds
1 TB cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp sea salt
1/2 cup maple syrup
1/2 cup melted coconut oil
1 tsp vanilla
1/2 cup shredded coconut
Directions: Preheat oven to 300 degrees F. Place oats, nuts, and spices into a medium-sized bowl. Mix well. Add the syrup, melted coconut oil and vanilla to the oat mixture. Add shredded coconut and toss again. Spread mixture onto a large cookie sheet and place in the oven. Bake for 35 to 45 minutes, turning occasionally with a spatula. Remove from oven and let cool completely before transferring to a container.
This recipe yields about 5 cups of granola which will be enough to get you through many summertime mornings. I just warn you- this stuff is highly addictive!
